  • 1 cup unsweetened applesauce Keeps cookies moist.
  • 1 cup almond flour Gives a tender crumb.
  • 1/2 cup cocoa powder Provides rich chocolate flavor.
  • 1/4 cup honey or maple syrup Sweetener option.
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips (optional) Adds gooey chocolate pockets.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the applesauce, melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until smooth.
  3. In another bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  5. Fold in dairy-free chocolate chips if using.
Baking
  1. Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each.
  2. Bake for 10-12 minutes until edges are set but centers remain soft.
  3. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. You can add nuts or spices for customization. Store cookies in an airtight container at room temperature for up to a week.
