Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth and creamy.
  3. Add the rolled oats, vanilla extract, salt, and cinnamon, and stir until well combined.
  4. If desired, fold in optional mix-ins.
  5. Scoop portions onto a baking sheet lined with parchment paper, spaced about an inch apart.
  6. Bake in the preheated oven for 12-15 minutes or until edges are slightly golden.
  7. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a firmer cookie, chill the mixture for 30 minutes before baking. Store leftovers in an airtight container for freshness.
