Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth and creamy.
- Add the rolled oats, vanilla extract, salt, and cinnamon, and stir until well combined.
- If desired, fold in optional mix-ins.
- Scoop portions onto a baking sheet lined with parchment paper, spaced about an inch apart.
- Bake in the preheated oven for 12-15 minutes or until edges are slightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a firmer cookie, chill the mixture for 30 minutes before baking. Store leftovers in an airtight container for freshness.
