Crust Ingredients
  • 3 cups all-purpose flour
  • 1 cup granulated sugar for crust
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cold unsalted butter, cubed ensure very cold for flaky crust
  • 1 large egg, lightly beaten
  • 1/2 teaspoon vanilla extract
Filling Ingredients
  • 4 cups fresh blueberries
  • 1/2 cup granulated sugar for filling
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a 9x13-inch baking pan with parchment paper for easy removal.
  2. In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt until well combined.
  3. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the beaten egg and vanilla extract until the dough starts to clump together.
  5. Press about 2/3 of the dough mixture into the lined pan to form the crust. Once done, place the crust in the freezer for about 15 minutes.
Filling and Assembly
  1. In another bowl, combine the fresh blueberries, 1/2 cup of sugar, cornstarch, lemon juice, and lemon zest. Toss gently until the blueberries are coated.
  2. Remove the crust from the freezer and spread the blueberry mixture evenly over the crust.
  3. Crumble the remaining dough over the top of the blueberries.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is bubbling.
  2. Once baked, cool completely in the pan before cutting into squares.

Notes

Ensure that your butter is very cold. Do not overmix the dough; mixing until just combined will lead to a tender texture. Allow the bars to cool completely before cutting to maintain their shape. Consider adding a pinch of cinnamon for extra flavor.
