Preparation
- Preheat your oven to 375°F (190°C) and line a 9x13-inch baking pan with parchment paper for easy removal.
- In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt until well combined.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in the beaten egg and vanilla extract until the dough starts to clump together.
- Press about 2/3 of the dough mixture into the lined pan to form the crust. Once done, place the crust in the freezer for about 15 minutes.
Filling and Assembly
- In another bowl, combine the fresh blueberries, 1/2 cup of sugar, cornstarch, lemon juice, and lemon zest. Toss gently until the blueberries are coated.
- Remove the crust from the freezer and spread the blueberry mixture evenly over the crust.
- Crumble the remaining dough over the top of the blueberries.
Baking
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is bubbling.
- Once baked, cool completely in the pan before cutting into squares.
Notes
Ensure that your butter is very cold. Do not overmix the dough; mixing until just combined will lead to a tender texture. Allow the bars to cool completely before cutting to maintain their shape. Consider adding a pinch of cinnamon for extra flavor.
