  • 1 cup cheese curds Fresh cheese curds are recommended for best melting.
  • 4 large eggs Fried or poached, with runny yolks preferred.
  • 1/2 cup Hollandaise sauce Homemade is best, but store-bought can be used.
Seasonings
  • 1 teaspoon salt To taste.
  • 1/2 teaspoon pepper To taste.
  • 2 tablespoons chives Optional, for garnish.

Preparation
  1. Cook the French fries according to package instructions or make your own from scratch, ensuring they’re golden and crispy.
  2. Fry or poach eggs to your liking, aiming for runny yolks for richness.
Assembly
  1. Place the hot fries on a plate, piling them high.
  2. Top the fries with cheese curds, letting them melt slightly.
  3. Carefully place the cooked eggs on top of the cheese curds.
  4. Drizzle generously with Hollandaise sauce, season with salt and pepper, and add chives if desired. Serve immediately.

Notes

For best results, spread fries evenly on the baking sheet. If making Hollandaise from scratch, whisk until thick and velvety. Consider adding red pepper flakes for a spicy kick.
