- Cook the tortellini according to package instructions. Once cooked, drain and set aside.
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the diced chicken to the skillet, seasoning with salt, pepper, and Cajun seasoning. Cook until browned and cooked through, about 7-10 minutes.
- Toss in the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
- Add the cooked tortellini to the skillet, tossing gently until well combined and heated through.
- Serve hot, topped with grated Parmesan cheese and chopped parsley.
Notes
For best results, allow garlic to cook just until fragrant and adjust Cajun seasoning to taste. This dish can be made ahead of time and reheated gently for meals throughout the week.
