Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, melt the butter, then mix in the sugar until well blended. The mixture should be smooth and glossy.
  3. Add the eggs one at a time, stirring in the vanilla extract until the mixture is creamy and well combined.
  4. In another bowl, whisk together the flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing gently until just combined. Be careful not to overmix; the batter should be thick and some lumps are okay.
  6. Fold in the roasted cherries until they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking dish, spreading it evenly to the corners.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  2. Allow to cool for a bit, slice into squares, and serve warm for the best experience.
