  • 2 large ripe bananas Bananas should be soft and brown-speckled for optimal flavor.
  • 1/2 cup unsalted butter, softened Ensure it's at room temperature for easy mixing.
  • 1/2 cup brown sugar Packed tightly for the best sweetness.
  • 1/4 cup granulated sugar
  • 1 large egg At room temperature.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda For leavening.
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon Optional, for added spice.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In a separate mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add in the mashed bananas, egg, and vanilla extract to the butter mixture and mix until combined.
  5. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are lightly golden but the centers still look soft.
  3. Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best enjoyed warm. Store any leftovers in an airtight container to maintain texture.
