Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the unsalted butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- In a small bowl, mix together the brown sugar and cinnamon for the cinnamon-sugar swirl.
- Roll the cookie dough out on a floured surface into a rectangle.
- Evenly spread the cinnamon-sugar mixture over the rectangle.
- Starting from one edge, roll the dough tightly into a log.
Baking
- Slice the log into even pieces, about 1/2 inch thick, and place them on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are set but the centers remain soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Cookies can be shaped in advance and baked later. Store in a sealed container to keep them soft. Enjoy warm or at room temperature.
