Cooking the Chicken
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Season both sides of the chicken breasts with salt and pepper. Cook in the skillet for about 6 to 7 minutes on each side, or until golden brown and fully cooked through (a meat thermometer should read 165°F or 74°C). Remove the chicken from the skillet and set it aside on a plate.
Making the Sauce
- In the same skillet, add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant but not browned.
- Pour in the heavy cream and bring the mixture to a gentle simmer, stirring occasionally as it begins to bubble.
- Gradually stir in the grated Parmesan cheese and Italian seasoning until the sauce is smooth and thickened, which should take just a couple of minutes.
Combining and Serving
- Return the cooked chicken to the skillet, spooning the creamy sauce over it. Let it simmer for an additional 2 minutes to ensure everything is heated through.
- Garnish with freshly chopped parsley before serving.
