Method
 

Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Season both sides of the chicken breasts with salt and pepper. Cook in the skillet for about 6 to 7 minutes on each side, or until golden brown and fully cooked through (a meat thermometer should read 165°F or 74°C). Remove the chicken from the skillet and set it aside on a plate.
Making the Sauce
  1. In the same skillet, add the minced garlic and sauté for about 1 minute, stirring frequently until fragrant but not browned.
  2. Pour in the heavy cream and bring the mixture to a gentle simmer, stirring occasionally as it begins to bubble.
  3. Gradually stir in the grated Parmesan cheese and Italian seasoning until the sauce is smooth and thickened, which should take just a couple of minutes.
Combining and Serving
  1. Return the cooked chicken to the skillet, spooning the creamy sauce over it. Let it simmer for an additional 2 minutes to ensure everything is heated through.
  2. Garnish with freshly chopped parsley before serving.

Notes

For best results, ensure chicken breasts are of even thickness for uniform cooking. Don’t rush the garlic; sauté until fragrant for deeper flavor. For thicker sauce, simmer the cream longer before adding cheese. Serve immediately for best flavor and texture.
