Ingredients
  

Chicken Salad Ingredients
  • 2 cups cooked rotisserie chicken, shredded You can use other cooked chicken if preferred.
  • 1 cup mayonnaise or Greek yogurt Using Greek yogurt can lighten the salad.
  • 1 cup celery, chopped Adds crunch.
  • 1/2 cup diced apples or grapes Optional for sweetness.
  • 1/4 cup chopped nuts Pecans or walnuts work well.
  • 1 tsp dill or parsley, chopped For added flavor.
  • 1 tsp salt Adjust to taste.
  • 1 tsp pepper Adjust to taste.
Puff Pastry
  • 1 package frozen puff pastry sheets Thawed according to package instructions.
  • 1 egg for egg wash Beaten for brushing the pastries.

Method
 

Prepare Chicken Salad
  1. In a large bowl, combine the shredded chicken, mayonnaise or yogurt, celery, diced apples or grapes, chopped nuts, and herbs.
  2. Season with salt and pepper and mix until well combined.
  3. Cover the bowl and refrigerate for at least 30 minutes.
Prepare Puff Pastry
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface, then cut it into squares.
  3. Scoop a spoonful of the chicken salad mixture onto the center of each square.
  4. Fold the pastry over the filling diagonally and pinch the edges to seal.
  5. Place the filled puffs on a baking sheet lined with parchment paper.
  6. Brush the tops with the beaten egg for a golden finish.
Bake
  1. Bake for 20-25 minutes or until the pastries are golden and puffed.
  2. Remove from the oven and let cool slightly before serving.

Notes

Leftovers can be refrigerated and reheated, though they are best enjoyed fresh.
