Prepare Chicken Salad
- In a large bowl, combine the shredded chicken, mayonnaise or yogurt, celery, diced apples or grapes, chopped nuts, and herbs.
- Season with salt and pepper and mix until well combined.
- Cover the bowl and refrigerate for at least 30 minutes.
Prepare Puff Pastry
- Preheat the oven to 400°F (200°C).
- Roll out the thawed puff pastry on a floured surface, then cut it into squares.
- Scoop a spoonful of the chicken salad mixture onto the center of each square.
- Fold the pastry over the filling diagonally and pinch the edges to seal.
- Place the filled puffs on a baking sheet lined with parchment paper.
- Brush the tops with the beaten egg for a golden finish.
Bake
- Bake for 20-25 minutes or until the pastries are golden and puffed.
- Remove from the oven and let cool slightly before serving.
Notes
Leftovers can be refrigerated and reheated, though they are best enjoyed fresh.
