Preparation
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper.
- Rinse the potatoes under cold water and pat them dry thoroughly.
- Cut the potatoes into evenly sized wedges, about 8 wedges per potato.

- In a large bowl, toss the wedges with olive oil, cornstarch, paprika, garlic powder, onion powder, oregano, salt, and black pepper.
Baking
- Arrange the seasoned wedges in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Notes
For maximum crispiness, ensure the wedges do not touch each other on the baking sheet. Patting potatoes dry helps them crisp up beautifully. Experimental with different seasonings for your favorite flavor combinations.
