Topping
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/4 cup butter, melted

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, toss the sliced peaches with the sugar substitute and cinnamon until evenly coated.
  3. Spread the peach mixture in an even layer in the prepared baking dish.
Batter Preparation
  1. In a separate bowl, whisk together the flour and baking powder.
  2. Slowly stir in the milk and melted butter until just combined; do not overmix—the batter should have a few lumps.
Baking
  1. Pour the batter evenly over the peaches in the baking dish, covering as much fruit as possible.
  2. Bake in the preheated oven for about 45-50 minutes, or until the topping is golden brown and a toothpick inserted in the center comes out clean.
  3. Let it cool for at least 10 minutes before serving.

Notes

Ripe peaches ensure the best flavor; avoid overmixing the batter for a tender topping. If browning too quickly, cover with aluminum foil.
