Preparation
  1. In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined, leaving a few lumps.
Cooking
  1. Heat a non-stick skillet over medium heat. To check if it's ready, sprinkle a drop of water on it; it should dance and evaporate.
  2. Pour about a 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  3. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  4. Remove from the skillet and serve warm with syrup or desired toppings.

Notes

Keep pancakes warm in a low oven while cooking the remaining batter. Experiment with different toppings like fresh berries or chocolate chips.
