Preparation
- In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.
- Pour the wet ingredients into the dry ingredients and mix until just combined, leaving a few lumps.
Cooking
- Heat a non-stick skillet over medium heat. To check if it's ready, sprinkle a drop of water on it; it should dance and evaporate.
- Pour about a 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
- Remove from the skillet and serve warm with syrup or desired toppings.
Notes
Keep pancakes warm in a low oven while cooking the remaining batter. Experiment with different toppings like fresh berries or chocolate chips.
