  • 2 cups Broccoli florets Fresh
  • 2 cups Carrots Fresh, chopped
  • 1 medium Red bell pepper Fresh, chopped
  • 1 medium Zucchini Fresh, chopped
  • 1 medium Red onion Fresh, chopped
  • 4 cloves Garlic (minced) Fresh
  • 1/4 cup Olive oil For roasting
  • 1 teaspoon Dried thyme For flavor
  • 1 teaspoon Dried rosemary For flavor
  • to taste Salt and pepper
  • 2 tablespoons Balsamic vinegar For additional flavor
  • 1/4 cup Parmesan cheese (grated) Optional topping

Method
 

Preparation
  1. Preheat your air fryer to 380°F (190°C).
  2. In a large mixing bowl, combine the broccoli, carrots, red bell pepper, zucchini, red onion, and minced garlic. Toss well to ensure all veggies are coated.
  3. Drizzle the olive oil over the vegetables. Sprinkle with thyme, rosemary, salt, and pepper, then drizzle with balsamic vinegar and mix thoroughly until everything is evenly coated.
Cooking
  1. Place the mixed vegetables in the air fryer basket in a single layer for even cooking.
  2. Cook for about 12-15 minutes, shaking the basket halfway through to ensure they cook evenly. Look for fork-tender veggies with a slight golden-brown color.
  3. They're done when they are tender to the fork's touch and have that enticing roasted flavor.
  4. If desired, top with grated Parmesan cheese immediately after cooking and serve hot.

Notes

For the best results, roast the vegetables in batches if necessary. Feel free to experiment with different vegetables or herbs based on your preference or seasonal availability. Drizzling a little more balsamic vinegar just before serving can enhance the flavor.
