Preparation
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper.
- In a medium bowl, melt the butter and let it cool slightly. Whisk in the granulated sugar and brown sugar until combined.
- Stir in the cocoa powder, salt, and vanilla extract until fully incorporated.
- Add the eggs one at a time, whisking well after each addition.
- Gently fold in the flour and cornstarch until just combined.
Baking
- Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Ganache Preparation
- While the brownies are baking, heat the heavy cream until just simmering. Remove from heat and stir in the chopped chocolate until you have a silky ganache.
Finishing Touches
- Once brownies are out of the oven, pour the ganache over the top and sprinkle with rainbow chocolate chips.
- Allow to cool at room temperature, then refrigerate for about an hour until the ganache sets.
