Ingredients
  

Brownie Base
  • ½ cup unsalted butter melted
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup Dutch-process cocoa powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs room temperature
  • ½ cup all-purpose flour
  • 1 tbsp cornstarch
Ganache Topping
  • ¼ cup heavy cream
  • 4 oz semisweet chocolate chopped
  • pinch salt
Garnish
  • 2-3 tbsp rainbow candy-coated chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper.
  2. In a medium bowl, melt the butter and let it cool slightly. Whisk in the granulated sugar and brown sugar until combined.
  3. Stir in the cocoa powder, salt, and vanilla extract until fully incorporated.
  4. Add the eggs one at a time, whisking well after each addition.
  5. Gently fold in the flour and cornstarch until just combined.
Baking
  1. Pour the batter into the prepared pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Ganache Preparation
  1. While the brownies are baking, heat the heavy cream until just simmering. Remove from heat and stir in the chopped chocolate until you have a silky ganache.
Finishing Touches
  1. Once brownies are out of the oven, pour the ganache over the top and sprinkle with rainbow chocolate chips.
  2. Allow to cool at room temperature, then refrigerate for about an hour until the ganache sets.

Notes

Tips: Use room temperature eggs for better incorporation. Avoid overmixing to maintain texture. Cool completely before slicing for clean squares.
