Ingredients
  

For the Marinade
  • 1/4 cup soy sauce Use tamari or coconut aminos for a gluten-free option.
  • 2 tbsp honey Adjust based on sweetness preference.
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
For the Chicken and Vegetables
  • 1 lb chicken breast, sliced Ensure even slices for uniform cooking.
  • 1 cup broccoli florets
  • 1 medium red bell pepper, sliced
  • 2 stalks green onions, chopped For garnish.

Method
 

Preparation
  1. In a medium-sized bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, and minced ginger until well combined.
  2. Add the sliced chicken, ensuring each piece is fully coated in the marinade. Allow it to sit for about 15 minutes to absorb the flavors.
Cooking
  1. Preheat your air fryer to 375°F (190°C).
  2. Once preheated, arrange the marinated chicken in a single layer in the basket. Cook for 8-10 minutes, flipping halfway, until the chicken is browned and cooked through. Aim for an internal temperature of 165°F (75°C).
  3. While the chicken is cooking, heat a skillet over medium heat. Add the broccoli and red bell pepper to the skillet and stir-fry for about 3-4 minutes until they are tender yet crisp.
  4. Once the chicken is done, combine it with the stir-fried vegetables in the skillet.
Serving
  1. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can also be frozen, just separate chicken from vegetables before freezing. Reheat in the microwave or on the stovetop until warmed through, avoiding overcooking.
