Preparation
- In a medium-sized bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, and minced ginger until well combined.
- Add the sliced chicken, ensuring each piece is fully coated in the marinade. Allow it to sit for about 15 minutes to absorb the flavors.
Cooking
- Preheat your air fryer to 375°F (190°C).
- Once preheated, arrange the marinated chicken in a single layer in the basket. Cook for 8-10 minutes, flipping halfway, until the chicken is browned and cooked through. Aim for an internal temperature of 165°F (75°C).
- While the chicken is cooking, heat a skillet over medium heat. Add the broccoli and red bell pepper to the skillet and stir-fry for about 3-4 minutes until they are tender yet crisp.
- Once the chicken is done, combine it with the stir-fried vegetables in the skillet.
Serving
- Serve hot, garnished with chopped green onions and sesame seeds.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can also be frozen, just separate chicken from vegetables before freezing. Reheat in the microwave or on the stovetop until warmed through, avoiding overcooking.
