Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened Make sure it's at room temperature
  • 1 cup brown sugar, packed Provides moisture and sweetness
  • 1/2 cup granulated sugar
  • 2 large eggs Room temperature for better mixing
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats Old-fashioned preferred for texture
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon Can substitute with nutmeg or allspice
  • 1/2 teaspoon salt Balances the sweetness
For the Filling
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar Sifted for smoothness
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk Adjust for desired consistency

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add eggs one at a time, beating well after each addition, and stir in the vanilla.
  4. In another bowl, combine oats, flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized amounts of dough onto a baking sheet, spacing them apart.
Baking
  1. Bake for 10-12 minutes or until edges are set and centers are soft.
  2. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Filling
  1. In a bowl, beat together the butter, powdered sugar, vanilla, and milk until smooth and spreadable.
  2. Once cookies are completely cool, spread filling on the flat side of one cookie and top with another cookie.
  3. Repeat until all cookies are sandwiched.

Notes

Store in a sealed container to keep cookies soft. For a firmer filling, chill in the fridge before serving.
