Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Add eggs one at a time, beating well after each addition, and stir in the vanilla.
- In another bowl, combine oats, flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized amounts of dough onto a baking sheet, spacing them apart.
Baking
- Bake for 10-12 minutes or until edges are set and centers are soft.
- Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Filling
- In a bowl, beat together the butter, powdered sugar, vanilla, and milk until smooth and spreadable.
- Once cookies are completely cool, spread filling on the flat side of one cookie and top with another cookie.
- Repeat until all cookies are sandwiched.
Notes
Store in a sealed container to keep cookies soft. For a firmer filling, chill in the fridge before serving.
