Preparation
- Brew and cool the tea completely.
- In a serving glass, stir together the honey and fresh lemon juice until smooth and glossy.
- Fill the glass with ice.
- Slowly pour in the sparkling water over the ice.
- Pour the cooled butterfly pea tea down the side of the glass in a slow stream to create an ombré effect.
- Gently stir to combine, garnish with lemon slices, and serve immediately.
Notes
For best results, dissolve honey completely, cool the tea fully, and pour tea slowly. Serve fresh for the best fizz and visual appeal.
