For the Biscuits

  • 3/4 cup milk Stir gently to avoid overmixing.
For the Chicken
  • 2 cups fried chicken strips (marinated in buttermilk) Ensure crispy coating.
  • 1/2 cup hot honey (or honey mixed with hot sauce) For the sweet and spicy drizzle.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. Add the cold butter to the flour mixture, cutting it in until it resembles coarse crumbs.
  4. Stir in the milk gently until just combined; be careful not to overmix.
  5. Turn the dough onto a floured surface, kneading gently a few times just to bring it together.
  6. Pat the dough into a roughly 1-inch thick round and cut out biscuits.
  7. Gather the scraps, re-pat, and cut more biscuits until the dough is used up.
Baking
  1. Place the biscuits on a baking sheet and bake for about 15-20 minutes, until golden brown.
  2. While the biscuits are baking, fry the marinated chicken strips in hot oil for about 5-7 minutes until crispy.
Assembly
  1. Assemble by placing a piece of fried chicken on each biscuit and drizzle generously with hot honey.
  2. Serve warm with pickles or coleslaw if desired.

Notes

To achieve the best results, ensure your butter is very cold and do not overmix your dough. Store leftovers in an airtight container at room temperature for up to two days, or refrigerate for a week and reheat in the oven.
