Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/4 cup unsalted butter, softened Should be truly softened, not melted.
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • 1 teaspoon vanilla extract
Glaze Ingredients
  • powdered sugar for icing
  • additional key lime juice for icing Adjust consistency to preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking sheet.
  2. In a medium bowl, whisk together the flour, baking soda, and salt until combined.
  3. In a separate bowl, beat the softened butter and granulated sugar until lighter in color and fluffy.
  4. Mix in the egg, key lime juice, key lime zest, and vanilla extract until smooth.
  5. Combine the dry ingredients with the wet in a few additions, mixing just until the dough comes together.
Baking
  1. Drop rounded tablespoons of dough onto the baking sheet, leaving space between each.
  2. Bake for 10–12 minutes until the edges are lightly golden and centers look soft.
  3. Move cookies to a wire rack to cool completely before glazing.
Glazing
  1. In a small bowl, stir powdered sugar with key lime juice until preferred consistency is reached.
  2. Drizzle the glaze over cooled cookies and let it set before serving.

Notes

For best results, use truly softened butter, zest before juicing, and ensure cookies cool completely before glazing. Adjust glaze thickness as desired.
