  3. Stir in the chopped spinach and cook until it has wilted, which should take around 1-2 minutes.
  4. While the vegetables are cooking, crack the eggs into a bowl and whisk in a pinch of salt and pepper until the mixture is frothy.
  5. Pour the whisked eggs into the skillet with the sautéed mushrooms and spinach.
  6. Stir gently with a spatula, allowing the eggs to cook until they are softly set and no longer runny, about 3-4 minutes.
  7. Serve hot, optionally topping with additional salt and pepper to taste.
