- In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), powdered sugar, cinnamon, vanilla extract, and a pinch of salt. Mix until everything is fully incorporated and resembles a dough.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Gently flatten each ball into a cookie shape.
- Chill the tray in the refrigerator for at least 30 minutes to help the cookies firm up.
- While the cookies are chilling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Once chilled, drizzle the glaze over each cookie and allow it to set before serving.
Notes
Don’t rush the chilling process; allow the cookies to chill fully for best texture. Adjust sweetness by tasting the dough before rolling; add more sweetener if desired. Use a cookie scoop for uniform sizing.
