  • Pinch unit salt

Preparation
  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), powdered sugar, cinnamon, vanilla extract, and a pinch of salt. Mix until everything is fully incorporated and resembles a dough.
  2. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Gently flatten each ball into a cookie shape.
  3. Chill the tray in the refrigerator for at least 30 minutes to help the cookies firm up.
  4. While the cookies are chilling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  5. Once chilled, drizzle the glaze over each cookie and allow it to set before serving.

Notes

Don’t rush the chilling process; allow the cookies to chill fully for best texture. Adjust sweetness by tasting the dough before rolling; add more sweetener if desired. Use a cookie scoop for uniform sizing.
