  • 1 lb okra, sliced
  • 1 lb chicken, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tbsp Creole seasoning Adjust based on heat preference.

  • 2 tbsp olive oil For sautéing.

Preparation
  1. In a large pot over medium heat, add the olive oil and allow it to warm for a minute.
  2. Add the chopped onion and minced garlic, sautéing until they become translucent and fragrant, about 3-4 minutes.
  3. Introduce the chicken pieces to the pot, cooking until they are browned on all sides, about 5-7 minutes.
  4. Stir in the diced tomatoes, chicken broth, and Creole seasoning. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  5. After 20 minutes, add the sliced okra, continuing to simmer until the okra becomes tender, approximately another 15-20 minutes.
  6. Season with salt and pepper to taste, stirring thoroughly before serving hot.

Notes

To reduce the sliminess of okra, avoid overcooking it. Serve hot with rice or crusty bread.
