Ingredients
  

Noodle and Pork Ingredients
  • 8 oz wide Lo Mein noodles, cooked and rinsed
  • 1 tablespoon peanut oil for sautéing
  • 1 pound ground pork ensure finely crumbled for even cooking
  • 1/4 cup sliced green onions plus 2 tablespoons for garnish
  • 1/2 cup low-sodium chicken broth for the sauce
  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha adjust according to spice preference

  • 4 cups coleslaw mix adds crunch and freshness

Method
 

Preparation
  1. Cook the Lo Mein noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
Cooking
  1. In a large skillet or wok, heat the peanut oil over medium-high heat. Add the ground pork and sauté until browned, breaking it apart with a spoon, about 5-7 minutes.
  2. Toss in 1/4 cup of green onions and continue to cook for another minute until fragrant.
  3. Whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl to make the sauce.
  4. Add the cooked noodles and coleslaw mix into the skillet with the browned pork. Pour the sauce over the top and toss everything together for about 2-3 minutes until evenly coated and heated through.
  5. Garnish with the remaining green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding a splash of broth if needed.
