Preparation
- Cook the Lo Mein noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
Cooking
- In a large skillet or wok, heat the peanut oil over medium-high heat. Add the ground pork and sauté until browned, breaking it apart with a spoon, about 5-7 minutes.
- Toss in 1/4 cup of green onions and continue to cook for another minute until fragrant.
- Whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a bowl to make the sauce.
- Add the cooked noodles and coleslaw mix into the skillet with the browned pork. Pour the sauce over the top and toss everything together for about 2-3 minutes until evenly coated and heated through.
- Garnish with the remaining green onions before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stovetop, adding a splash of broth if needed.
