  • 1 cup corn, canned or frozen
  • 1 avocado, sliced
  • 1 cup lettuce, chopped
  • 1/2 cup cheese, shredded (cheddar or Mexican blend)
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon taco seasoning
  • 4 large tortillas

Preparation
  1. In a medium bowl, combine the shredded chicken, diced bell peppers, corn, lime juice, and taco seasoning. Stir until well mixed.
  2. Lay out the tortillas on a flat surface and spread a generous layer of sour cream or Greek yogurt on each one.
  3. Evenly spoon the chicken mixture onto each tortilla, focusing on the center.
  4. Top each tortilla with slices of avocado, a handful of chopped lettuce, and a sprinkling of shredded cheese.
  5. Fold in the sides of each tortilla, then roll tightly from one end to the other to create a wrap.
