  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons sriracha or chili sauce
  • 2 cups cooked rice
  • 2 tablespoons vegetable oil

Preparation
  1. In a large skillet, warm the vegetable oil over medium-high heat until shimmering.
  2. Add the minced garlic, cooking it for about 30 seconds until it becomes fragrant but not browned.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until it’s thoroughly browned, about 5-7 minutes.
  4. Stir in the mixed vegetables, along with the soy sauce and sriracha. Cook for another 5 minutes or until the vegetables are tender but still vibrant in color.
  5. Taste and season with salt and pepper as needed, adjusting the heat level to your preference.
  6. Plate the stir-fry over the cooked rice, allowing the flavors to meld as you enjoy each delicious bite.

Notes

For best results, avoid overcrowding the skillet, cut veggies uniformly, use fresh rice, and adjust spice levels according to taste. Consider adding scrambled eggs for extra protein.
