  • 0.25 cups coconut flour Helps achieve perfect dough balance.
  • 1 tablespoon baking powder For leavening.
  • 0.5 teaspoon salt Enhances flavor.
  • 0.25 cups milk (or plant-based milk) Use whichever suits your preference.
  • 1 large egg Acts as a binding agent.
  • 0.5 cups sweetener Choose your favorite sugar substitute.
  • 0.25 cups softened butter (or alternative) Adds moisture and richness.
Filling Ingredients
  • 2 tablespoons cinnamon Provides the signature spice flavor.
  • 0.5 cups sweetener For the filling, adjust to taste.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well to ensure everything is evenly distributed.
  3. In another bowl, whisk together the milk, egg, and half of the sweetener until smooth and creamy. Pour this mixture into the flour blend and stir until it forms a soft dough.
Assembly
  1. On a floured surface, roll out the dough into a rectangle about 1/4-inch thick.
  2. In a small bowl, combine the remaining sweetener and cinnamon. Spread the softened butter evenly over the dough, then sprinkle the cinnamon mixture generously on top.
  3. Starting from one edge, carefully roll the dough into a tight log and pinch the seams to seal it.
  4. Cut the dough log into equal pieces, about 1 inch thick, and place the rolls on the prepared baking sheet leaving space between them.
Baking
  1. Bake in the preheated oven for 15-20 minutes until the edges are golden and the rolls are cooked through.
  2. Allow the rolls to cool slightly before serving. Enjoy them warm or at room temperature.

Notes

For best results, use room temperature ingredients. Adjust sweetness to taste and consider adding nuts or raisins to the filling for additional flavor.
