Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. Add the pitted dates and hot water to a food processor and blend until smooth, thick, and shiny.
  3. Pour in the melted coconut oil, followed by the eggs and vanilla. Process until fully combined.
  4. In a separate bowl, whisk together the cocoa powder, baking powder, and salt.
  5. Tip the dry mixture into the food processor and pulse until just combined.
Baking
  1. Scrape the batter into the prepared pan, spreading evenly with a spatula.
  2. Sprinkle the dark chocolate chips over the top, if using.
  3. Bake for 20-25 minutes until the edges are set and the center is still soft.
Cooling
  1. Let the brownies cool completely in the pan before lifting out and cutting into squares.

Notes

For best results, use truly hot water for blending the dates, and allow the brownies to cool fully for neat slices. Optional chocolate chip toppings enhance the flavor.
