Ingredients
  

For the Cookie Dough
  • 1 cup Unsalted butter, softened Make sure it is truly softened for best results.
  • 1 cup Creamy peanut butter
  • 3/4 cup Granulated sugar
  • 3/4 cup Brown sugar Gives a chew and depth to the cookie.
  • 2 large Eggs Room temperature preferred.
  • 2 teaspoons Vanilla extract
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate chips Use semi-sweet or milk chocolate - your choice.
For the Filling
  • 12 pieces Soft caramels (or caramel bits) Use soft caramels for a gooier center.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and creamy peanut butter until completely smooth.
  3. Add granulated sugar and brown sugar and mix until the dough looks fluffy.
  4. Beat in the eggs and vanilla extract until glossy and well combined.
  5. Mix in flour, baking soda, and salt until just combined.
  6. Fold in the chocolate chips until evenly distributed.
Assembly and Baking
  1. Scoop a portion of dough, flatten it in your palm, place a caramel piece in the center, then wrap the dough around it and roll into a sealed ball.
  2. Arrange dough balls on the prepared sheets with space between them.
  3. Bake until the edges are set and the centers look slightly underdone, about 10-12 minutes.
  4. Cool the cookies briefly on the tray, then transfer to a wire rack to finish cooling.

Notes

Store in an airtight container to maintain softness. For a fresh-baked feel, let cookies sit at room temperature for a few minutes before serving.
